- 1 can chickpeas, drained and rinsed
- 1/2 cucumber, diced
- 1/2 red capsicum, diced
- 1/4 red onion, finely chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
In a bowl, combine chickpeas, cucumber, capsicum, and onion.
In a small jar, shake together lemon juice, olive oil, oregano, salt, and pepper.
Pour dressing over salad and toss gently.
Chill for 10 minutes before serving.
