Sopa de Fideo (Mexican Noodle Soup)

Ingredients

  • 1 tbsp vegetable oil
  • 100g fideo pasta (or broken thin spaghetti)
  • 2 cups low‑sodium chicken or vegetable stock
  • 1 cup tomato passata (puree)
  • 1 cup water
  • Pinch of ground cumin
  • Fresh coriander to garnish

Instructions

  • Heat oil in a pot, toast pasta until golden.
  • Add stock, tomato puree, water, and cumin. Stir well.
  • Simmer until pasta is tender (about 8–10 min).
  • Garnish with coriander and serve.
