Sopa de Fideo (Mexican Noodle Soup)
Light tomato‑based noodle soup, comforting and quick.

- 1 tbsp vegetable oil
- 100g fideo pasta (or broken thin spaghetti)
- 2 cups low‑sodium chicken or vegetable stock
- 1 cup tomato passata (puree)
- 1 cup water
- Pinch of ground cumin
- Fresh coriander to garnish
Heat oil in a pot, toast pasta until golden.
Add stock, tomato puree, water, and cumin. Stir well.
Simmer until pasta is tender (about 8–10 min).
Garnish with coriander and serve.
