One‑Pan Chicken Cacciatore
A hearty Italian stew with chicken, tomatoes, capsicum, and herbs.

- 4 chicken drumsticks
- 1 tbsp olive oil
- 1 onion, sliced
- 1 red capsicum, sliced
- 2 cloves garlic, minced
- 1 can diced tomatoes (400g)
- 1 tsp dried oregano
- 1/2 cup chicken stock
- Salt & pepper
Heat oil in a large pan, brown chicken on all sides, remove.
Add onion, capsicum, and garlic, cook 3 minutes.
Stir in tomatoes, oregano, stock, salt, and pepper.
Return chicken, cover, and simmer 35–40 minutes until tender.
Serve with pasta or crusty bread.
