Minestrone with Soft Vegetables
A hearty vegetable soup with pasta, cooked until tender for easy chewing.

- 1 tbsp olive oil
- 1 onion, chopped
- 1 carrot, diced
- 1 celery stick, diced
- 1 zucchini, diced
- 1 cup chopped cabbage or spinach
- 1 can diced tomatoes (400g)
- 4 cups low‑sodium vegetable stock
- 1/2 cup small pasta (e.g., ditalini)
- 1 can cannellini beans, drained
Heat oil in a large pot, sauté onion, carrot, and celery 5 min.
Add zucchini, cabbage/spinach, tomatoes, and stock. Simmer 15 min.
Add pasta and beans, cook until pasta is soft.
Season to taste, serve with grated parmesan if desired.
