Mild Chicken Curry

- 500g chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp mild curry powder
- 1 tsp ground turmeric
- 1 can coconut milk (400ml)
- 1 tbsp vegetable oil
- Salt to taste
Heat oil in a large pan over medium heat.
Add onion and garlic, cook 3 minutes.
Stir in curry powder and turmeric, cook 1 minute.
Add chicken, cook until sealed.
Pour in coconut milk, season with salt.
Simmer 20 minutes until chicken is cooked and sauce thickens. Serve with rice.
