- 1 cup ricotta cheese
- 1/2 cup thickened cream
- 1/4 cup sugar (or to taste)
- Zest & juice of 1 lemon
- 1/2 tsp vanilla extract
In a bowl, beat cream until soft peaks form.
In another bowl, whisk ricotta, sugar, lemon zest, juice, and vanilla until smooth.
Gently fold whipped cream into ricotta mixture.
Spoon into small glasses or bowls.
Chill at least 30 min before serving. Garnish with extra zest or berries.
