Chicken & Rice Noodle Soup (Pho Ga)

Aromatic clear broth with tender chicken and soft rice noodles.

Ingredients

  • 1.5 L low‑sodium chicken stock
  • 2 slices fresh ginger
  • 2 star anise
  • 2 chicken breasts
  • 200g flat rice noodles
  • 1 cup bean sprouts
  • Fresh herbs: coriander, Thai basil
  • Lime wedges

Instructions

  • Simmer stock with ginger and star anise for 10 min.
  • Add chicken breasts, poach until cooked (about 12 min). Remove, slice thinly.
  • Cook noodles separately per packet instructions.
  • Strain broth, return to pot, season lightly with fish sauce if desired.
  • Serve noodles in bowls, top with chicken, ladle over hot broth, add sprouts, herbs, and lime.
