Chicken & Rice Noodle Soup (Pho Ga)
Aromatic clear broth with tender chicken and soft rice noodles.

- 1.5 L low‑sodium chicken stock
- 2 slices fresh ginger
- 2 star anise
- 2 chicken breasts
- 200g flat rice noodles
- 1 cup bean sprouts
- Fresh herbs: coriander, Thai basil
- Lime wedges
Simmer stock with ginger and star anise for 10 min.
Add chicken breasts, poach until cooked (about 12 min). Remove, slice thinly.
Cook noodles separately per packet instructions.
Strain broth, return to pot, season lightly with fish sauce if desired.
Serve noodles in bowls, top with chicken, ladle over hot broth, add sprouts, herbs, and lime.
