Chicken Provençal
Tender chicken simmered with tomatoes, olives, and herbs for a rustic French classic.

- 4 chicken thighs, bone‑in, skin on
- 1 tbsp olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 can diced tomatoes (400g)
- 1/2 cup pitted black olives
- 1 tsp dried thyme
- Salt & pepper
Heat oil in a large pan over medium heat. Brown chicken on both sides, remove.
Add onion and garlic, cook 2 minutes.
Stir in tomatoes, olives, thyme, rosemary, salt, and pepper.
Return chicken to pan, cover, and simmer 35–40 minutes until tender.
Serve with crusty bread or mashed potato.
