Chicken Provençal

Tender chicken simmered with tomatoes, olives, and herbs for a rustic French classic.

Ingredients

  • 4 chicken thighs, bone‑in, skin on
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (400g)
  • 1/2 cup pitted black olives
  • 1 tsp dried thyme
  • Salt & pepper

Instructions

  • Heat oil in a large pan over medium heat. Brown chicken on both sides, remove.
  • Add onion and garlic, cook 2 minutes.
  • Stir in tomatoes, olives, thyme, rosemary, salt, and pepper.
  • Return chicken to pan, cover, and simmer 35–40 minutes until tender.
  • Serve with crusty bread or mashed potato.
