Breakfast Burrito with Eggs & Beans

A warm tortilla wrap filled with creamy scrambled eggs, seasoned beans, and a touch of cheese.

Ingredients

  • 2 medium flour tortillas
  • 3 eggs
  • 1/2 cup canned black beans (drained and rinsed)
  • 1/4 cup grated cheddar or tasty cheese
  • 1 tbsp olive oil or butter
  • Pinch of mild paprika
  • Salt & pepper to taste

Instructions

  • Heat beans in a small pan with paprika, salt, and pepper for 2 minutes.
  • In another pan, whisk eggs with a little salt, then scramble over low heat with butter/oil until just set.
  • Warm tortillas in a dry pan for 30 seconds each side.
  • To assemble: Spoon beans down the centre, add scrambled eggs, sprinkle with cheese.
  • Roll up gently and serve immediately.
