Mild Chicken Curry

Ingredients

  • 500g chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp mild curry powder
  • 1 tsp ground turmeric
  • 1 can coconut milk (400ml)
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  • Heat oil in a large pan over medium heat.
  • Add onion and garlic, cook 3 minutes.
  • Stir in curry powder and turmeric, cook 1 minute.
  • Add chicken, cook until sealed.
  • Pour in coconut milk, season with salt.
  • Simmer 20 minutes until chicken is cooked and sauce thickens. Serve with rice.
