- 1 cup milk
- 1 egg
- 1 tbsp melted butter (plus more for cooking)
- ½ cup blueberries (fresh or frozen)
Instructions
- In a bowl, whisk flour and sugar.
- In another bowl, whisk milk, egg, and melted butter.
- Pour wet mix into dry mix, stir gently until just combined (batter will be a little lumpy).
- Fold in blueberries.
- Heat a non‑stick pan over medium heat, lightly butter.
- Pour ¼ cup batter per pancake, cook until bubbles form, flip, and cook until golden.
- Serve warm with a drizzle of maple syrup.
