Minestrone with Soft Vegetables

A hearty vegetable soup with pasta, cooked until tender for easy chewing.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 celery stick, diced
  • 1 zucchini, diced
  • 1 cup chopped cabbage or spinach
  • 1 can diced tomatoes (400g)
  • 4 cups low‑sodium vegetable stock
  • 1/2 cup small pasta (e.g., ditalini)
  • 1 can cannellini beans, drained

Instructions

  • Heat oil in a large pot, sauté onion, carrot, and celery 5 min.
  • Add zucchini, cabbage/spinach, tomatoes, and stock. Simmer 15 min.
  • Add pasta and beans, cook until pasta is soft.
  • Season to taste, serve with grated parmesan if desired.
