Chicken & Rice Noodle Soup (Pho Ga)
Aromatic clear broth with tender chicken and soft rice noodles.

Ingredients
- 1.5 L low‑sodium chicken stock
- 2 slices fresh ginger
- 2 star anise
- 2 chicken breasts
- 200g flat rice noodles
- 1 cup bean sprouts
- Fresh herbs: coriander, Thai basil
- Lime wedges
Instructions
- Simmer stock with ginger and star anise for 10 min.
- Add chicken breasts, poach until cooked (about 12 min). Remove, slice thinly.
- Cook noodles separately per packet instructions.
- Strain broth, return to pot, season lightly with fish sauce if desired.
- Serve noodles in bowls, top with chicken, ladle over hot broth, add sprouts, herbs, and lime.
